Ok, here are a couple of things i need help/suggestions with:

My DVD has a 5.1 japanese and a 2.0 english audio track, i would love to keep them both in my movie! It also has English Subs, which i would like to be selectable when needed,so which format/container is best, avi or mkv or ogm, also, there is another movie which is purely jap so i need subs, so for that movie, which is the best option, embedding subs while movie encoding or muxing them in the container? Also, does Qpel has any significant changes in video quality? Also, whic is the best audio optio, ogg or mp3 or original ac3? pls do help me guys n' gals.....
Thanks....

P.S. : is there any online guide on how to make .mkv files?

Try matroska.org? Since the development is largely there, I would suspect that they would have a good link to a guide that outlines making a .mkv file. You can also try corecodec.com where a lot of the .mkv discussion is centralized upon.
