Converting MPEG to MP3

I don't know if this forum is the right place to ask this, but if anyone has some suggestions, please help
My task is to download Audio from a VCR to my computer and convert it to MP3 so I can burn it to a Sony Minidisc Recorder. Over the years I have recorded Audio on my vcr's and now want to transfer the audio to Minidisc.
I am using the Intervideo WinDVR software with the NVidia personal cinema graphics card. The vcr is is plugged into the breakout box.
The minidisc does not have an analog input.

Why not just plug your MiniDisk player directly into the "Audio Out" RCA output of the VCR and record the audio? You might only get a mono signal unless you have a specialized cable or stereo outs in your VCR.

Then what type of recording capability does it have?

Capture your mpg.
Load the mpg into Goldwave.
Save as .mp3

I assume the VHS tapes also contain "Video" as well as "Audio", but the audio is what you want to convert to mp3. I would use "TMPGEnc" to "De-multeplex" the mpeg files (captured video and audio). Use the "Mpeg Tools" feature ("File" > "Mpeg Tools") or follow the advice given by "reboot".
