Chicken Chimichangas

You should deep fry these because that's what a chimi is, but baking them works well.

2 1/2 cup chopped chicken
2/3 cup picante sauce
1/3 cup green onion
3/4 tsp cumin
1/2 tsp oregano
1/2 tsp salt if desired

Combine everything in a frying pan and simmer 5 min. till most of liquid has evaporated.

8 large flour tortillas
1/4 cup melted butter
1 cup shredded jack or cheddar cheese

Brush one side of tortilla with butter. Spoon about 1/3 cup of chicken mixture onto center and top with cheese.

Fold the two sides over and roll into a burrito. Place seam side down. Bake at475 for 13 min or until golden brown.

If you deepfry, then use a toothpick to hold the burrito closed.

Taco Shells
3 Cups Flour
1 1/2 tsp.Baking Powder
1 tsp salt
3 tbsp. Oil
1 Cup Water
After dough is mixed take half of hand full (or bigger depending on how big of taco you want) of dough roll it out flat place meat in middle of dough fold dough over meat crimp edges with a fork to seal edges place in a pan with 1-2 inches of oil cook both sides till golden brown
It's very simple and tastes great

Chicken Enchilada Soup
1/2 Cup vegetable oil

1/4 Cup chicken base

3 Cups diced yellow onions

2 Teaspoons ground cumin

2 Teaspoons chili powder

2 Teaspoons granulated garlic

1/2 Teaspoon cayenne pepper

2 Cups masa harina

4 Quarts water (divided)

2 Cups crushed tomatoes

1/2 Pound process American cheese, cut in small cube

3 Pounds cooked, cubed chicken

In large pot, place oil, chicken base, onion and spices. Saute until onions are soft and clear, about 5 minutes In another container, combine masa harina with 1 quart water. Stir until all lumps dissolve. Add to sauteed onions, bring to boil. Once mixture starts to bubble, continue cooking 2-3 minutes, stirring constantly. This will eliminate any raw taste from masa harina. Add remaining 3 quarts water to pot. Add tomatoes; let mixture return to boil stirring occasionally. Add cheese to soup. Cook stirring occasionally, until cheese melts. Add chicken; heat through. Makes 1 1/2 gallons or 16-20 servings
