how can I change the subtitles in DVD

What I want to do is to take a DVD, which has subtitles other than one I need, and change one of the existing subtitles with one in my language. Can anybody help me on this...programs I need, procedure, etc..

FOr example, I buy a DVD, but that DVD doesn't have subtitle in my language. I want to add subtitle, but the rest of the disc to stay as it is (5.1 sound etc...). Anybody????
