Burning DVD without menu or extras

If a DVD won't fit on a standard DVD-R, is it possible to make a working copy of it without the menus or extras, not by ripping and doing work on the video itself, but simply by exluding certain files?

You can do exactly what you've described by using DVD Shrink in the "Re-author" mode...
