I was unable to find anything on my search on the forums ... is there a way to extract just the audio track from a DVD using DVD shrink? If not can you make any recommendations?

Nope...

You should be able to accomplish this with SmartRipper, DVDDecrypter, or similar...

There is also a specific program that will do this called "DVD Audio Ripper". It will save individual chapters as either a WAV or mp3 file(s).
