In my experience, Win98SE, Win2K and WinXP delivered great performance. It's really more dependant on the speed of your CPU and memory interface (SDRAM, DDR-SDRAM, RDRAM, or anything else). However, I would stay with the NT-based OS for the best stability. Win98SE tends to freeze more often and this is bad, especially when you're in the middle of an encoding session.
