In EAC is it possible for it to create a folder with the album name and put the mp3s in there? eg The beatles - white album and then the mp3s go in there

Yes. What version are you using? I haven't updated this system in a long time, so it's still running v0.9pb11 (2001), but you should find it somewhere like:
EAC (pulldown)>EAC Options>Filename tab
Then use the filename format to cause the directory to be created based on your criteria.
Alternately, you could download an Options Profile from the EAC society (I can't remember the correct name). They use a strict format & procedure for ripping & storing so they can P2P efficiently, and I know they use directory names like you want. These links are old, but they probably still work:
