As Tony Greig says, I expect he ony focussed on the fact that he caught it, not that he rolled over and the ball touched the grass while still in his hand. Anyway, Dhoni was given not out, although who knows if it hit the glove? There are also questions about when the ball is in sufficient control of the catcher that he can do that.
And yes, Symonds was out - he admitted it and now there's fire raging on cricinfo about whether not walking is cheating.
