Compression

I am new to the game and am confused about the compression percentage in DVD shrink. For example, I open a DVD and the automatic compression is 49% and if I remove the spanish, the compression percentage actually increases to 52%. WHy is that so? Also I would like to hear peoples opinions on what compression % is worst that they will accept before splitting the movie to two DVDs. Thanks
