Creating one disk from several chapters from different movies I own

I am looking for help - I am confused by all the options available out there - all I want to know how to do is the following:

create a DVD-r with a front end menu that consists of several chapters from my purchased DVD's so I can demonstrate different items.

ie - chapter 'x' from Jurassic Park / chapter 'y' from Behind Enemy Lines,...

Please let me know how to do this ?
