burning data to DVD-R

When you create a DVD you burn your DVD-R at DVD-ROM (UDF/ISO). Why do you do this? If you want to burn data should you use the same settings or burn the DVD-R at DVD-ROM (ISO)?

how do a burn a 7gb vts file in hard drive to two dvd disc using imgburner. or how do i compress this 7gb vts file on hard drive to one single layer dvd disc using imgburner.
