help with DVD editing and re-burning

Lo all, i've just got myself a DVD-RW and want to try something
    new with it.
I have an HK DVD i bought a while back, while the sound and
picture are both fine, the subs are (to put it mildly) crap.
Keeping in mind im a total noob, whats the EASIEST way
    to go about-

ripping the video and audio streams
    removing the existing subs
replacing them with my own subs
re-encoding it all either back to a DVD-R or DivX/ogg (i havent decided yet)?

For now i just want to learn how its done, then i'll concentrate
on quality, timing and making myself a sweet DVD

    Thanks.

Combination of DVD Decrypter (or SmartRipper) and IFOEdit...
