I have a short video (the birth of my best friend's little girl) that I want to share with several members of my family. It's a total of about 10 min and I have a menu and every thing made for it. The expected size of the entire thing is about 250 meg. Will this play on standard dvd players if I burn the DVD structure onto a CD?

Yes, burning onto a CD is not a good idea, unless your players can handle it. Most will play CD Audio.
However, the player looks for a DVD when the tray is closed. If it can't find a DVD, it will shift focus to see if it can read data at CD focus depth. If it can, it then figures that it's got a CD and many just don't expect MPEG2 coming off a CD.
