There are many "Freeware" programs that can "Demultiplex" (extract) the audio track(s) from DVDs. A few notable ones are:
1. SmartRipper
2. DVD Decrypter
3. DVD2AVI
However, if you are looking for something that is close to a "One-Click" solution, then "DVD Audio Ripper" as "setarip" mentioned would be worth looking into. You would still have to use a "Burning" application such as "Nero" or similar to burn the audio track(s) to CD.
