What format/encoding should I be using so that I can burn to CD...and then pop into my DVD player and watch? Is there such a format? Do DVD players support any other media than DVD's???

Most stand-alone DVD players support VCDs and SVCDs. -

So let's suppose I'm sitting here with a DVD....what method would YOU use to create a VCD or SVCD? Assuming I wanted VERY VERY good quality.....on say.......2 cd's.Comment

Try this site. It has a lot of useful information, possibly more than what you need.
On the other hand, try out DVD2VCD. I'm not an avid VCD creator, so whatever advice I have here is probably not the best. Try asking in the VCD section. There will be people skilled in that field capable of helping you out.
