Replacing audio in a home-movie DVD

We had some ancient home movies transferred to DVD, but they put on some really cheesy elevator music with it.

What is the process for me to replace that music with my own music files?

I assume you could do it in DVDShrink in the re-author mode, but I need step-by-step instructions.

Demux audio and video with PgcDemux.

Then remux using your new audio file with MuxMan.
http://www.videohelp.com/tools?tool=Muxman. You may need to convert your audio to LPCM or AC3. For that you can use BeLight.
