An excellent source for the info you seek is the net. Do a google or other search engine search for "video signals" or "television video signals" and "video tape formats".
Trust me, tons of info will magically appear on your screen for your study pleasure.

Assemble editing is simply like hitting the record button, with the exception that the machine will precisely start the recording at the last point of the previous recording, matching up the new signal with the previous one so that you have a seemless transition between the two. Assemble editing records both audio and video.
Insert editing is taking either audio or video and "inserting" the new signal into the exsisting recording without breaking up the exsisting time code or control track informaiton. An example of this is when a news reporter is speaking about something on the screen but we dont see the reporter, just hearing the voice while watching the video being described. The reporter "inserted" their voice over any previous exsisting audio track and kept the video as is.
Hope that helps. But for more in-depth info about this can be found all over the net. For me to explain it all here would require way too much space that I dont think would be appropriate to be posting 5 mile long posts.
