Converting DVD discs to digital format. What codec, and other questions...

I want to start moving my 100+ dvd's to digital format. I want to preserve as much quality as possible so I don't ever have to re-rip them. If they will be played on a 1080p monitor should I upconvert my SD dvd's? Can I keep all the audio tracks in one file? Is it possible to keep the menu's(does any container support this?). I want to be able to play these on a future Xbox 360 or some other HTPC device. Should I consider just keeping them in raw format without converting to xvid/divx etc? If so, will a xbox 360 play these files the same as it would a dvd?

What should I do to preserve my collection and start moving digital? What resolution should I use, what codecs, etc?

I think the XBox 360 will play the files ( MKV ) if you burn them to disc or DL as it is data, this is what I read somewhere any one have XBox 360 can confirm this ?

What exactly is a MKV file? Does this container allow me to do the things I want?

ok so I googled MKV and found matroska.org. It looks AWESOME! Will XBMC play MKV containers. My REAL question is ... Does software exist to translate a dvd movie into the MKV container easily(or even kind of complicated). Keeping all the menu's and extras intact?
