The only "out of the ordinary" items are under both the "Video" and "Advanced" tabs, set the resolution to 720x480. Under the "Audio" tab, set to 44,100Hz instead of 48,000Hz.
Note: It's been quite some time since I last did this (just for fun, since it consumes too many CD-Rs to merely replicate my DVDs), so if you run into any problems, post back here and perhaps it'll "ring a bell"...
