DVD Decrypter in IFO mode, stream processing enabled, select 'demux' and pick your stream.
You'll end up with an audio file. Goldwave or CoolEdit Pro are great for audio editing.

Got it all working but cannot figure out how to cut a section from the audio track and save it as an MP3 file. The "manual" just tells me I can do it but without any instructions. It seems to assume that you know what you are doing....I select a section, select cut or copy ,,,and then what ?..any advice appreciated as I'm happy to keep trying but it has to be simpler

Well, I persevered and finally cracked it. Only doing simple save selection but it is s aving the selection as mp3 so all is well. That Goldwave is a very nice little piece of freeware....cheers
