DVD to DVD

I must be less intelligent than I thought. I can successfully rip and play back a DVD on my hard drive with no problem.

However, I have no clue as to how to take my ripped files and burn them back onto a DVD.

Also, my files seem to take up more space on my hard drive than 4.7GB, which is the limit on my DVD's. Will I have to sacrifice quality or aome additional content when burning back to DVD?
