which format for dvd conversion on hard disk, incl. multiaudio and subtitles ?

I want to convert my DVD into a smaller unique file to be played from the hard disk. This file should contain video (good quality for videoprojector), 2 tracks of 5.1 AC3 compatible sound, subtitles.
What are the best simple solutions today?
1-Bivx/Xvid with subtitles, 2-Matroska, 3-Ogm, 4-Other
