To remove the gap between the remaining tracks, you have to turn on the DVD Shrink option Output Files / Logical remapping of enabled streams.
Take care, however, as using this option can lead to serious problems. Use the DVDShrink plugin for PgcEdit: it has a function to check if it is safe to use this option with the current DVD.
Note also that you can remove the useless stream with PgcEdit, but again, do it at your own risk. To remove the stream, right-click on any PGC of the domain, and select Domain Stream Attributes. Tick the Delete box of the french audio track, and click OK. Verify carefully if the audio commentaries can still be selected via the audio or bonus menu, and that the right track is selected.
