8mm tape(analog) to digital -> DVD end result

I'm using a Leadtek WinFast TV2000 XP Delux capture card in my compture and a s-video attached to my 8mm camcorder *not hi8. I used the PVR supplied by leadtek for the capturing, and I much have accumulated a BUNCH of codecs over the course, or else this PVR comes with a lot. Anyway, I found one the Direct DVD set at maximum quality in video and bit rate of around 6000 kbps and then I used neoDVD Standard 5.0 to encode the mpeg-2 file to more adaptable DVD complian files, such as *.VOB, *.IFO, etc.

There are so many choices I just wonder if I'm choosing wisely, the format for the conversion of analog to digital to work on??

Attached is a file showing "some" of the options.

Other picture might be of value as well. This is just a Print Screen of my desktop when the program is loaded.
