unwrap a container file to remove parts

How can I best go about “unwrapping” a container so I can separate the audio and video tracks, and, most importantly, pull out the subtitle files? Is this even something people have tried to do in the past, or am I just crazy.

What is the file u want to separate the tracks from?
For DVDs, PGCDemux will do it.
